French Onion Soup Recipe
Believe it or not, I use to hate onions but, after having my second child I acquired a taste for onions. I guess it is true you have to try something at least ten times before you LIKE it or NOT! Today, I am preparing a delicious Easy From Scratch French Onion Soup Recipe that will make your taste buds soar.
Ingredients
- 1 tablespoon olive oil
- 3/4 pounds onions cut into thin slices; I am using Yellow Onions
- 2 Garlic Cloves; diced
- 2 tablespoons of all-purpose organic flour
- 4 cups of vegetable or beef broth
- 1/4 cup of red wine or Cooking Sherry
- 1/2 cup of shredded Parmesan cheese
- Eight Slices of Swiss Cheese
- 1 tablespoon of dried parsley
- 1 teaspoon of dry basil
- 1/2 teaspoon of dry oregano
- 1/4 teaspoon dry thyme leaves
- Salt and Pepper to taste
- Sourdough French Bread thinly sliced and toasted
In a pot heat oil over medium heat, add onions in a thin layer and garlic and cook for 10 minutes. Try not to stir often because you want the onions to caramelize. Next, sprinkle flour, dried parsley, basil, oregano and thyme; cook for an additional 5 minutes. Next, add the broth and wine and cook for ten minutes or until the soup simmers. Reduce the heat of the burner to low and simmer the soup with a lid on for thirty minutes.
Ladle soup on oven proof soup bowls.
Now top soup with a slice of Sourdough French bread, slice of Swiss Cheese and sprinkle with Grated Parmesan cheese. Boil French Onion Soup in the oven until the cheese is melted.
Serve Hot and with a Glass of Red Wine.
Store in refrigerator up to three days or freeze for up to three months.
