Easy Homemade Loaded Baked Potato Soup Recipe
We love to pack a thermos full of this soup for lunch and it will make a great substitute for a sandwich.
My goal as a full-time working mother is to get meals on the table fast while make them delicious. Trust me this soup is a “game changer” and you and your family will love; remember you can pair it with a sandwich, biscuit or a plate a fruit and dinner is served!
Ingredients:
- 1 tablespoon of extra-virgin olive oil
- 3 stalks chopped organic celery
- 2 medium chopped organic carrots
- 1 medium chopped yellow onion
- 2 cloves of minced garlic
- 5 large red skin, chopped potatoes, leave the skins on if desired.
- 4 cups organic vegetable broth
- 1 bay leaf
- 3-4 springs for fresh thyme
- ½ cup of milk ( room temperature)
- 1 teaspoon of Salt and pepper, and to taste
- Half teaspoons of onion powder
- 1/2 teaspoons of garlic powder
- 1/2 teaspoons of paprika
- Optional Toppings: fresh parsley, green onion, shredded cheddar cheese, bacon and/or sour cream
First Sauté chopped onion and minced garlic in olive oil in a large pot on medium high heat.
Next, add chopped carrots and celery until soft. Now add chopped potatoes and give a good stir!
Slowly add organic vegetable broth and simmer until warm. Add one bay leaf, fresh thyme and season potato soup with salt, pepper, garlic powder, onion powder and paprika over low heat for thirty minutes until vegetables including potatoes are soft.
Finally, take an immersion blender or any blender and blend half of the potato soup until smooth.
Ladle homemade potato soup in bowls, sprinkle shredded cheese, parsley, green onion and/or bacon and serve with a salad and warm sourdough bread!
Homemade Potato Soup Crockpot Recipe
I prep in morning if I am making Potato Soup in the crockpot. Cook slow for eight hours but, if you are pressed for time, you may cook a minimum of four hours.
First grease the inside of your crockpot with olive oil. Add all your ingredients to your crockpot with the exception of the toppings. Once your potato soup is at the end of its cooking time blend using an immersion blender half of the soup.
