What is Sourdough Discard?

Sourdough Discard comes from your Sourdough Starter. In the beginning of creating your sourdough starter you will need seven days to create this natural yeast. When creating your sourdough starter during the seven days you will remove about a half cup and then feed with additional flour and water. The Sourdough Discard can be thrown out, fed to livestock or to bake Homemade Sourdough Irish Soda Bread, nothing goes to waste.

Sourdough Starter is created by fermentation of flour and water and is active however, when my sourdough starter is doormat, I like to feed and discard to activate it again. Fermentation is a process when yeast and bacteria break down and create starch, sugar, carbon dioxide, alcohols. Again, this is perfect time to make a sourdough discard recipe.

Sourdough Discard is a mixture of flour and water that creates a natural yeast. This yeast is bacteria that will grow and excellent for gut health.

Before you could buy yeast in little package our ancestors created yeast by creating a starter which in turn can be discarded to make many amazing recipes.

Remember Sourdough Starter is the beginning of creating the yeast and takes the bacteria from environment. Discard is removed from the sourdough starter in the first seven days of creating starter or when you have an excessive amount of sourdough starter and want to make pancakes, simple sourdough crepes or Irish soda bread.

What does Irish Soda Bread Taste Like?

Irish Soda Bread will taste a bit heavy, sweet and dense. Homemade Irish Soda Bread is not squashy but, crumbles when cutting or spread anything on it.

The buttermilk will enrich sourdough Irish soda bread and the sourdough dough discard will provide a sour taste and is filled with gut friendly probiotics.

Is Irish Soda Bread the Same as Sourdough Irish Soda Bread?

The only difference in Irish Soda Bread and Sourdough Irish Soda Bread is there is sourdough discard. You can omit the sourdough discard from this recipe, but I am adding it to not only use up sourdough discard but, to provide some gut friendly probiotics to this famous bread!

Easy Homemade Sourdough Irish Soda Bread Recipe

This Sourdough Irish Soda bread is so good and a family favorite around St. Patrick’s Day and it is easy, very flavorful and a great way to use up sourdough discard.

Ingredients

  • 3 cups good quality organic all-purpose flour; shifted.  
  • 1 tablespoon baking powder·        
  • 1/3 cup organic raw sugar·        
  • 1 teaspoon salt·        
  • 1 teaspoon baking soda·        
  • 1 organic egg lightly beaten·  
  • 1/2 cup of sourdough discard that has been fed in the last twelve hours. 
  • 2 cups of buttermilk·        
  • ¼ cup melted butter
  • Raw Organic butter for greasing Loaf Pan

Directions

First, preheat your oven to 325 degrees and then grease a loaf pan with butter.  

Next, in a mixing bowl combine shifted all-purpose flour, baking powder, sugar, salt and baking soda.  In another mixing bowl combine lightly beaten farm fresh egg, sourdough discard and buttermilk and mix.  

Stir the sourdough discard/buttermilk mixture to your flour mixture.  Mix till moistened and then stir in melted butter.  You can do a longer ferment by creating batter the night before or let it sit for a bit before baking. The longer the fermentation the better for the gut it is.

Bake bread for sixty-five minutes until a toothpick comes out clean.  

Cool Sourdough Irish Soda Bread on a wire rack.  Finally, wrap in aluminum foil until ready to serve. 

Serve Sourdough Irish Soda Bread with butter, jam or your favorite meats and cheese.

How to Store Homemade Sourdough Irish Soda Bread

Once your Irish Soda Bread is baked; remember to let it cool completely before slicing. Store in an airtight container or bag for up to four days. You can freeze your homemade Irish Bread by covering it in freezer paper and place in a sealed plastic bag for up to three months.

Beginner Sourdough Equipment and Ingredient

Understand that you do not need fancy equipment with getting started with sourdough. I have created a list of sourdough items that I have bought and have been helpful through the years. In the beginning I use what I owned and eventually expanded. The most important thing when working with sourdough is to learn and practice with the live organism.

All Purpose Flour is a refined flour with a protein, gluten and use for general purpose. I use this flour for everything. Buy this flour organic and the best quality your can afford.

Bench Scraper is great to dividing, shaping and lifting dough from counter to bowls.

Large Bowl to preparing, mixing and creating sourdough breads and bake goods. Your mixing bowl should have a diameter of about nine inches.

Cooling Rack is nice to won to cool sourdough bread and bake goods.

Spatula for mixing sourdough and scraping dough out of the bowls.

Silicone Oven Mitts for removing sourdough focaccia bread out of the oven without burning your hands.

Lame is a treat to score any sourdough loaf before baking.

Wire Rack is crucial for cooking sourdough bread including sweet treats. A wire rack allows your baked goods to cool completely.

Loaf Pan for not only baking meatloaf but, any bread loaf.

Tips on Sourdough Discard

The reason my sourdough starter does not look like my best girlfriends it is because the two different homes, environments such as what is in the air.

Why does my sourdough discard not bubbly?

There can be many reasons your sourdough discard is not bubbly such as the flour you are using, or it is still sleepy.

Why is my Sourdough Irish Soda Bread Gummy?

If your Sourdough Irish Soda Bread is Gummy it is because you did not let it cool completely before slicing into it. The Irish Soda Bread needs to cool on cooling rack for at least an hour before slicing into it. I know it can be tempting to slice into homemade bread right when it comes out of the over but, take note it is still baking as it is cooling.
