Learning and looking for marbling of the meat will take time but, ideally you will determine it by the meat grade such as prime, choice and select.
When I buy at the supermarket; “Choice” is usually the only option!
Select is a lower grade meat where as “Prime” is a premium cut.
It is hard to find “Prime” at many grocery store and mostly sold at restaurants.
However, I have found “Prime” cuts of meat at specialty grocery store.
The color of meat is good to know because that is determined by the amount of protein an animal is given and the muscle mass.
If beef is exposed to oxygen the color of meat will be dark verses meat that has been tightly package it will have a duller color in the shade of red. Package meat will lack oxygen therefore, sometimes causing a light red color. Once expose to the element’s meat by change color slightly.
When buying meat at the grocery store for this crock pot roast make sure it is cold and free from tears. Smell the meat for freshness and the look at the sell by date.
If meat has a foul odor do not buy and bring to the butcher’s attention.
Look at affordable roast by the cost per serving rather than by pound. A lot of times the fat and bone is added to the weight determining the price per pound.
When selecting a cut of beef for this sweet and sour pot roast recipe I buy boneless and that will serve around three to four people per pound.

Place your fresh roast in the coldest part of your refrigerator as soon as possible especially in the warmer months.
Use your roast within three days for optimal benefits. You can also freeze your roast in a freezer bag for up to ten months. Label all your package with the date, cut and number of servings.

What does grass feed mean, it simply means animals that are fed grass up until they were butchered. Buying Grass Fed Meat has many benefits and nutrient than conventional such as higher in protein, iron zinc, lower in fat, improves digestion, and improves hair, skin and nails to name a few. Most meat in the USA is factory farmed and animals are raised under cruel circumstances. The animal’s health is unnatural and breeding ground for disease. Saving on grass-fed beef can be hard to achieve but, with careful planning you can save tons of money a year.
First, buying larger cuts of meat is the way to go. I usually purchase whole or half cows and have cut into a variety of options such as roast. I will either cook the whole large cut or divide into smaller portions into freezer bags.
Next, living in the Mid-west I can get large cuts of meat that is organic and affordable by contacting my local farms and arranging to buy a cow. Once I buy the animal it is butchered and then processed.
Buying meat on sale is key! Look at your local supermarket ads and determine what is a great low price for your area and once the grass-fed meat is on sale it is time to stock up.
Finally, look at big box stores such as Costco for grass fed meat. Costco has very affordable grass-fed beef options that you may want to jump on!
Simple Slow Cooker Sweet and Sour Pot Roast Recipe
It is never too late to refresh your cooking by preparing meals from scratch. Once you make this simple and delicious slow cooker roast you will wonder why you did not start sooner.
Ingredients:·
- 4 pounds of boneless chuck roast·
- 1 teaspoon Himalayan Sea salt·
- 1 teaspoon ground pepper·
- Medium white onion sliced·
- 2 cloves of garlic; diced·
- ¾ teaspoon dry ground mustard·
- ¼ red pepper flakes·
- 1 bottle of chili sauce·(I love the chili sauce from Trader Joe’s; no add ingredients)
- 1/3 cup of red wine
- 2 tablespoons of Worcestershire sauce·
- 3 tablespoons of cornstarch·
- ¼ cup water·
- 2 tablespoons of coconut oil
First, combine salt, pepper, mustard, and red pepper flakes in a bowl. Once your spices are combined; massage all over roast until covered. Next, add coconut oil to a preheat cast iron skillet. Place your roast in the cast iron to brown each side; flip every three-four minutes. Do not cook the roast but, lightly brown the outside to contain all the juices from within.
Browning your roast in a cast iron skillet on each side will amp the flavoring and preserve the internal juices.
Transfer roast to crock pot and set on Low or 8-9 hours or High for 5-6 hours. Adding to your slow cooker, onion, garlic, chili sauce, red wine and Worcestershire sauce and pour over roast.
Finally, remove roast from crock pot; combine cornstarch and water and whisk well and cook for 15 minutes on high. While the sauce is cooking let the roast rest for fifteen minutes. Once the sauce thickens pour sauce over roast or serve on the side.
Enjoy with red wine, potatoes, green vegetable and/or French bread.
