I store my starter in a large glass mason jar. When my starter in on the counter I cover with a tea towel and secure with a rubber band. In the refrigerator I sure the with a screw on lid.
If you do store in the refrigerator take it out to sit on the counter about 24 hours before you are going to use. I do fed my starter right when I take out of the refrigerator to reactive it with one cup of flour and 3/4 cup of filter water.
When I am done using my starter for the week I make sure it is fed and I leave in on the counter for twenty four hours before I place in refrigerator.

When baking cookies a few thing you want to keep in mind to be successful. You should bake your cookies with a good cookie sheet. Your cookie sheet should be shiny and bright.
I love a good stainless steal cookie sheet when baking my cookies.
For pretty brown cookies place cookie sheet on the center oven rack. Turn cookie sheet ninety degrees half way through baking. Check cookies at your minimum baking time; check if color is not achieved bake additional to create a golden brown color on the bottom of cookie.

- 1/2 cup Grass Fed Raw Butter (I love to use Kerrygold Irish Butter)
- 1/3 cup Shortening
- 1/2 cup sourdough starter or sourdough starter
- Half cup raw cane sugar
- 1/2 cup brown sugar
- 2 large farm fresh eggs
- 1 TSP of Vanilla
- 2 1/2 cup all-purpose flour; shifted
- 1 Teaspoon of baking soda
- 1/4 teaspoon sea salt
- 2 cups of organic dark chocolate chip morsels
- Cooking Spray
Preheat your over to 375 degrees. If your cookie sheets are darker in color spray with cooking spray to prevent sticking. Mix sugars, butter, shortening, egg and vanilla. Stir in sourdough starter or sourdough discard.
Next, with a shifter; shift all your dry ingredients into your mixing bowl.
I prefer to shift my dry ingredients because it make this cookie recipe lightly and fluffy.
Now mix your dry ingredients slowly into your wet ingredients except for chocolate chips. Once everything is combine; fold chocolate chips into the batter. Stir to combine all the ingredients.
Let your dough sit for fifteen minutes or longer so the fermentation can do its magic. The longer you let ferment the better the health benefits.
